Franz Pichler senior's vision was to produce a Grüner Veltliner with smaller grapes – which would have a proportionately lower yield, and in turn be less susceptible to fungal diseases and rot – as well as grapes with a higher extract.
A ground-breaking figure in vegetarian cuisine and a campaigner for the mindful use of foodstuffs “from root to leaf”.
