LEMON CAVIAR
The finger lime (Citrus australasica), also known as caviar lime or lemon caviar, is a citrus fruit of Australian origin containing juice vesicles extremely reminiscent of the "caviar” we are familiar with.
Other citrus fruits such as tangerines and lemons have similar vesicles, but what makes the finger lime so special is that the juice pearls are not packed inside the segments and have a more spherical shape. Pearls can be red, pink, yellow or green in colour.
The finger lime has exceptional organoleptic properties and lends itself to the most diverse uses in the kitchen – from the flavouring of desserts and drinks to the decoration of dishes and preparation of exquisite cocktails.
Perla di Giove (Jupiter’s Pearls) is one of the first (and few) companies in Italy to produce lemon caviar. Thanks to our many years of experience in the agri-food sector, we were able to develop a high-quality product that is free of GMOs and pesticides. Solely employing beneficial predatory insects, we avoid chemical treatments throughout the entire crop cycle, meaning the peel remains edible. Our product has the additional advantage of being fresher and cheaper than imports from the other side of the globe.
