Marcel Kazda has been head chef and gastronomic director of the Garbo restaurant in the Löwen in Eggenstein since 2017. Born in Karlsruhe, he has lived in Alsace since the 90s, he has always maintained his close connection to Baden. This Franco-German connection is also reflected in his menu, which combines traditional Baden cuisine with French influences.
With great dedication and passion , he and his team were awarded the coveted Michelin star in 2023. Kazda attaches great importance to classic craftsmanship and high-quality products, which are brought to the plate in a contemporary and modern way. He is not only concerned with flavour, but also with the emotions of the guests. He often plays with nostalgic elements , such as grandma’s steamed dumplings as an aperitif, which take many guests back to their childhood.
His professional career has taken him to renowned locations, including the Schlosshotel Bühlerhöhe in the Black Forest, Restaurant Imperial under the management of Wolfgang Müller, which at the time had 1 star and 18 points, and the then one-star Restaurant Zimmer in Strasbourg. A formative experience was his time at the Grandhotel Esplanade in Berlin, where he ran the Harlekin restaurant as sous chef alongside today’s three-star chef Marco Müller. Kazda then took over the kitchen of the traditional Baden restaurant Kaiserhof on Karlsruhe’s market square, which he ran for many years with a modern interpretation of Baden cuisine. He then moved to the Hotel Eden for a further 7 years, where the restaurant garbo was established.
