Douce Steiner is one of the most outstanding personalities in German gastronomy. As one of the few women in Germany with two Michelin stars, she runs the renowned ‘Hotel Restaurant Hirschen’ in Markgräflerland with a unique blend of passion, perfection and creativity.
Her classic French cuisine impresses with subtle flavours that are skilfully combined with modern elements. Douce Steiner knows how to make high-quality, regional products shine in unique dishes. Particularly remarkable is her ability to compose flavour experiences in her head and to implement them in the kitchen with heart and soul.
In 2023, she was named ‘Chef of the Year’ by Gault&Millau – a special award that recognises her exceptional culinary skills. Her work has been shaped by great role models such as Georges Blanc, Fritz Schilling and Harald Wohlfahrt, whose influences she has developed further with her own personal touch. Since 2012, the ‘Hirschen’ has been awarded two Michelin stars under her management.
The intimacy and elegance of her restaurant, which is housed in a 500-year-old building in Sulzburg, reflects her philosophy: ‘Small, but fine.’ With limited space and a dedicated team, she offers her guests an exquisite ambience and an exceptional menu selection. Whether a vegetarian menu or her famous classics such as langoustine royale on pink grapefruit – Douce Steiner turns every visit into an unforgettable culinary experience.
