On Saturday evening, Michelin-starred chef Roland Ettl, head of the acclaimed Restaurant Nigrum in Baden-Baden, invites guests on a refined culinary journey through traditional Viennese cuisine – modernized and artfully staged. Drawing inspiration from historic recipes, he has created a unique multi-course menu promising unforgettable gourmet experiences.

The evening is accompanied by Alexandra Erlacher, export manager of the prestigious Cantina Andrian, who will present first-class wines from South Tyrol, perfectly harmonizing with the dishes. Founded in 1893, Cantina Andrian was South Tyrol’s first wine cooperative and remains one of the region’s finest wineries. Its partnership with Cantina Terlan has preserved its independence and ensured exceptional wine quality.

The location

Restaurant Nigrum

“Nigrum“ is the Latin word for “black”. Black and gold are the colours that predominate in the restaurant’s interior, given the character of a cosy, vaulted cellar by the well-preserved, historic city wall. According to the proprietor, Florian Bajraj, the building is around 440 years old and was formerly part of the castle’s stables. Using various design elements, the restaurant has turned this down-to-earth location into an airy, tasteful and dignified environment. Worthy of special mention are the colourful, large-format paintings by Roland Schauls.
The service is excellent, modern and informal while also maintaining classical traditions. On the wine menu are wines from both regional and international wineries (e.g. from Martin Wassmer in Durchbach/Black Forest and Kellerei Andrian in Italy).
The bar has been shaped by contemporary thinking. Smaller dishes or selected items from the menu can be served here. And visitors attending the famous Festival Hall can also take the opportunity to enjoy a cocktail at the bar after the performance.
